Ruby Chocolate – The Latest Dessert Trend

Move over, goth foods. The latest dessert trend is Ruby Chocolate. As much as we enjoyed everything from hamburger buns to black-dyed ice cream, we’re absolutely in love with this brand-new chocolate and its millennial pink pastel hue.

So what really is Ruby Chocolate?

More than 10 years ago, one of the cocoa experts discovered that certain cocoa beans could produce chocolate with exceptional flavor and color. One such type which was discovered at the time was the Ruby cocoa beans. Ruby cocoa beans grow under uncommon weather conditions and are commonly found in Ecuador, Brazil or Ivory Coast.

The best thing about Ruby chocolate is that it naturally tastes like berries and has a soft pink color, and that too without any artificial flavors or colorings! With such exceptional qualities, I don’t see the point of not trying it out!

How to work with ruby chocolate? 

Ruby Chocolate Dipped Cookies

Ingredients

  • 180g unsalted butter, cold temperature
  • 300g  all-purpose flour
  • 1 egg
  • 75g Almond powder
  • 75g  powdered sugar
  • 100g ruby chocolate

Instructions

Step 1

Preheat the oven to 170 degrees.

Step 2

Add the melted butter to a large bowl and then pour in the powdered sugar. Blend until smooth using an electric mixer. Add flour and the almond powder and mix at low speed until well blended. The mixture will be crumbled and soft.

Add eggs and mix it for another minute or two until the dough starts giving a smooth texture.

Step 3

Cover the dough in baking paper and leave for around 30 minutes in cold temperature.

Step 4

Roll out the dough with a rolling pin, about 0.25 inches thick, and then cut cookies using a 2-inch round cutter.

Step 5

Bake the cookies for 12 to 15 minutes, or until you feel they’re done and slightly golden.

Step 6

Melt the Ruby Chocolate chips in a hot water bath (or simply using a microwave).

Step 7

Dip the cookies in the melted chocolate and then decorate them with coconut flakes or raspberry sprinkles. Set them on a piece of parchment paper to cool and dry.

Cream Ruby Puffs

Ingredients

RUBY PASTRY CREAM

  • 350
  • 85g sugar
  • 100g ruby chocolate
  • 30g
  • 35g

CHOUX PASTRY

  • 1 cup milk 125g
  • 100g
  • 10g sugar

Instructions

PASTRY CREAM

Step 1

Heat up the milk in a saucepan on medium heat. Wait for it to boil.

Step 2

In the meantime, whisk egg yolks and 3 tablespoons of sugar in a separate bowl. Whisk quickly for about 15 seconds, until the sugar starts to dissolve.

Step 3

Scatter Cornstarch over the egg-sugar-mixture you’ve just made and whisk until it gets smooth and slightly thickened.

Step 4

Once your milk gets heated-up, slowly drizzle it into the egg mixture while whisking constantly. Make sure you don’t pour the milk all at once and keep whisking until the mixture is uniform.

Step 5

Add the mixture to a saucepan and start heating it up on medium heat. Make sure you keep stirring the mixture so that it does not burn from the bottom.

Step 6

When the mixture is heated up properly, remove it from the saucepan and pour it into a bowl. Add some butter and keep stirring until it gets completely merged in. Add pieces of Ruby chocolate into the mixture and let them melt. Now just keep mixing until it turns into a smooth pink cream. Pour this into a heat-proof container, wrapped in a plastic wrap. Now let it cool for around 30 minutes and you can use it once it has cooled down.

PASTRY CREAM

CHOUX PASTRY

Step 1

Preheat the oven to 170 degrees.

Step 2

Heat a mixture of milk, butter, water, sugar, and salt over medium heat. When the butter has melted completely, add some flour into it and stir the mixture with a wooden spoon until everything gels in and turns into a soft dough.

Step 3

Take the pan off the heat and allow the dough to cool down a little. Now slowly pour in the eggs and mix until the dough turns into a smooth paste.

Step 4

Pour the mixture into a pastry bag fitted with a large plain round tip. Use this to shape the pastries.

Step 5

Bake these pastries for 35 minutes, or until they get slightly brown.

Step 6

Fill these baked puffs up with the Ruby cream you’ve just prepared.
