While green tea is made from tea plants that grow under the sun, matcha is made from tea plants that are specially grown in the shade. This is also one of the main reasons Matcha is high in chlorophyll and amino acids.

Making Matcha Green Tea is no rocket-science and everyone can learn to make it. You just need to crumble the Matcha leaf into a fine powder and dissolve that powder in hot water so that the entire leaf gives out its flavor.

Matcha Macaroons

This recipe can be a bit challenging for the beginners but we hope this step-by-step guide makes everything clear for you and you end up with delicious Matcha Macarons.

Ingredients for the Shells

  • 65g almond flour
  • 100g powdered sugar
  • 50g egg white
  • Green GEL Colour of your choice (DO NOT use liquid color)
  • 20g sugar
  • 1/8 teaspoon salt

Ingredients for the Filling:

  • 200g chopped white chocolate
  • 120g heavy cream
  • 1 tablespoon matcha powder0
  • black sesame

Instructions

Step 1

Preheat the oven to 150 degrees.

Step 2

Sift the almond flour and the icing sugar in a big bowl. Make sure to take out coarse almond or sugar bits.

Step 3

In the meantime, in a separate large bowl, whisk egg yolks, 3 Tablespoons of sugar, and salt to taste. Whisk quickly for about 10 seconds, add some sugar, and again continue to whisk for a couple more minutes.

Step 4

Once all the sugar has been fully mixed, add 1-3 drops of gel color before the mix develops stiff peaks. Beat until Stiff Peaks start to develop.

Step 5

Pour 1/3rd of the almond mixture into the egg whites. Lightly fold the egg whites into the almond flour and sugar mixture. Then add the rest of the almond mixture as well. DO NOT MIX or STIR at this point.

Step 6

Pour the mixture you’ve just made into a pastry bag fitted with a large plain round tip.
Pipe the macaron shells on a silicon or parchment paper. Before you start baking, wait until the shells have developed a ‘skin’ and have completely dried. This is critical to prevent cracking later on.

Step 7

Place the tray on the middle shelf and bake for 15 to 20 minutes. Bake only one tray at a time. Every oven is different so I would suggest checking after every 15 minutes.
Wiggle the top of the shell, it should be really firm. When you peel off the macaron, it should peel off easily without sticking.
If it does not pass the tests above, put them back in the oven and bake an extra minute at max.

Step 8

Once baked, let cool completely before turning over and stuffing with cream

Step 1

Melt the white chocolate and cream in a hot water bath (or simply in a microwave). Let the mixture cool completely

Step 2

Pour the mixture into a pastry bag fitted with a large plain round tip (12 reduce). Fill up the macarons and dip the edges in black sesame.

Instructions

Step 1

Preheat the oven to 175 degrees.

Step 2

Melt the butter and allow to cool.

Meanwhile, beat some eggs at high speed in your mixer. Slowly, add sugar and continue to beat the mixture for about 3-5 minutes. Add in vanilla and milk as well.

Step 3

In a separate bowl, whisk together flour, Matcha powder, and baking soda. Gently add these dry ingredients into the egg mixture.

Step 4

Add the cooled-down melted butter very slowly into the mixer. Add lemon zest and continue mixing for around 2 minutes.

Step 5

Butter and flour a madeleine pan and pour the mixture on it using a piping bag.

Step 6

Bake for 10 to 12 minutes. Allow the cakes to slightly cool before dusting them with powdered sugar.
