Ingredients for the Shells
- 65g almond flour
- 100g powdered sugar
- 50g egg white
- Green GEL Colour of your choice (DO NOT use liquid color)
- 20g sugar
- 1/8 teaspoon salt
Ingredients for the Filling:
- 200g chopped white chocolate
- 120g heavy cream
- 1 tablespoon matcha powder0
- black sesame

Preheat the oven to 150 degrees.

Sift the almond flour and the icing sugar in a big bowl. Make sure to take out coarse almond or sugar bits.

In the meantime, in a separate large bowl, whisk egg yolks, 3 Tablespoons of sugar, and salt to taste. Whisk quickly for about 10 seconds, add some sugar, and again continue to whisk for a couple more minutes.

Once all the sugar has been fully mixed, add 1-3 drops of gel color before the mix develops stiff peaks. Beat until Stiff Peaks start to develop.

Pour 1/3rd of the almond mixture into the egg whites. Lightly fold the egg whites into the almond flour and sugar mixture. Then add the rest of the almond mixture as well. DO NOT MIX or STIR at this point.
